Velier Foursquare 2006 Sassafras 14yr 61%

Foursquare Sassafras is a molasses rum from Barbados. It is a single blended rum, a rum produced using two different distillation methods within the same distillery. As usual, Foursquare blends column still and pot still distillates before aging.

This rum is a new collaboration between Luca Gargano (Velier) and Richard Seale (Foursquare's director). This selection is composed of barrels that have undergone double maturation.
The first part of the aging process took place in the traditional manner, with a 3-year maturation in former bourbon barrels.

After this first stage, the rums were transferred to cognac barrels for an additional 11 years. They were blended after 14 years in the tropics. The rum was finally bottled at cask strength.
