2000 is the harvest year for this second vintage, selected to pay tribute to the 25th anniversary of the Martinique AOC. An age figure not seen every day in the world of rum: 21 years.
The aging process was entirely tropical and was followed by a reduction to 47% before bottling.
The 2000 season was less dry than 1998, but perfect for growing sugarcane, with optimal maturity for attractive yields.
