Rhum Rhum Liberation 2024 is a Pure Single Agricole Rhum produced from an ancient sugarcane variety, Rouge B47.259, which has almost disappeared from the Antilles.
Once perfectly ripe, the canes are cut by hand with traditional "coutelas" (coils) and transported to the distillery on "cabrouets" pulled by bulls.
The freshly pressed juice is not diluted, as is customary in the production of rhum agricoles; fermentation takes place in open, temperature-controlled vats and lasts up to 5-6 days. After distillation, a long period of maturation begins in steel vats, lasting up to a year, during which the alcohol content is slowly reduced.
The rum is then aged in French oak barrels that have held some of the finest wines from France's greatest crus.
All Liberations bear the year of "liberation" from the barrel on the label. This version is bottled at 45°.
