Domaine de Courcelles was founded in 1932 in the much older sugar factory of the same name.

It closed its doors in 1964 following the retirement of its owner.

The cellars and still were moved to Saint-Marthe before ceasing all operations permanently in 1972.

This is a sugar factory rum (made from molasses) from the Guadeloupean distillery Domaine de Courcelles, distilled in January 1972, aged in 220-litre casks until November 2003, then transferred to oak foudres until its bottling at 54% in April 2005.

This is a rum aged for 31 years in casks, then for 1 and a half years in oak vats.

The wine has a coppery hue.

On the nose, one discovers notes of coffee, but also varnish, then burnt caramel, cigar box, frangipane, orange blossom, and sweet almond oil.

On the palate, the attack and power are well-balanced. One discovers notes of Haribo banana (candy), crêpe Suzette, and toffee, followed by empyreumatic and damp wood notes before a bitterness emerges, characterized by notes of coffee bean and bitter almond.
