Those in the know will recognize it: Saint Lucia! This small volcanic island in the Caribbean is a renowned rum-producing region, as evidenced by the success of brands such as Admiral Rodney and Chairman's Reserve.
It was at the island's only still-operating distillery, Saint Lucia Distillers, that LMDW discovered this gem of a rum: a 21-year-old vintage from 2004.
More precisely, this rum was distilled in a Vendôme pot still from molasses that underwent a long, two-day fermentation.
After an initial two-year maturation period in a tropical climate, this rum was shipped to us for an additional 19 years of aging in a continental climate.
The nose reveals enticing aromas of roasted pineapple, sugarcane, and vanilla. A seductive invitation that compels us to raise the glass to our lips... Having yielded to this irresistible urge, we discover a harmonious marriage of vegetal, fruity, and honeyed notes.
Saint Lucia's only still-operating distillery was established in 1972 through the merger of the last two production units still functioning on this volcanic island in the Lesser Antilles. Made from molasses that fermented for nearly two days, this expression was distilled in a Vendôme pot still and then aged for two years in a tropical climate followed by nineteen years in a continental climate. Having retained all the fiery smokiness of its early days, its aromatic and flavor profile also shines with a mature expression punctuated by exquisitely indulgent chocolate notes.
