Habitation Bellevue Hors d’Âge Carafe 1821 10 Years 2008 is a very old vintage from Marie-Galante, produced in one of the most eco-responsible distilleries in the Caribbean. It is capable of producing both agricole rums and molasses rums, which it sometimes blends during aging, as is the case here.
The rum was placed in oak barrels on July 2, 2008, and aged for 10 years in a tropical climate. After significant evaporation and intense maturation, due to these extreme climatic conditions, the rum was decanted on October 7, 2020.
Although 12 years have passed between these two dates, only the aging time in barrels counts. Thus, an age of 10 years was chosen, in addition to a two-year rest period to aerate and harmonize the spirit.
